Watermelon-Cucumber & Mint Juice

Munching on a sweet slice of watermelon under a shady tree may be the universally preferred method to enjoy the South’s favorite melon, but this quick and easy juice recipe is a popular favorite in our house especially because we can use our garden fresh cucumbers. Watermelons and cucumbers are nature's most hydrating foods. They're considered "cooling" foods in both Chinese and Indian medicine consisting of more than 80 per cent water. As summer ramps up, you will naturally be sweating more. Keep your body hydrated and avoid face dehydration, headaches, constipation and dry skin by enjoying this thirst quenching, hydrating and cooling juice.

 

Serves 2

 INGREDIENTS:

 2 cups chilled watermelon

1 cup chilled cucumber

1 tablespoons fresh lime juice

Handful fresh organic mint, plus additional for garnish

 METHOD:

1. Add watermelon, cucumber, lime juice and mint to blender container.

2. Cover and blend until smooth. 

3. Pour over ice and garnish with mint.
